Vegan fettuccine

Ingredients:
Spinach fettuccine pasta
Onion 1/2
Garlic 2 cloves
Olive oil or coconut oil 2 Tablespoons
Broccoli 1 cup
Cauliflower 1 cup
Carrots 1/2 cup
Tomato 1 medium
Fresh basil, rosemary, chives
Soy sauce or Braggs aminos
Salt and pepper
Veggie grounds
Vegan “cheese”
Cilantro
Avocado 🥑

Method:
Boil fettuccine pasta with salt
Stir fry in oil all vegetables, flavoring and veggie grounds.

Place fettuccine in center of plate
Top with stir fry
Garnish with vegan “cheese” and cilantro
Decorate with avocado slices 🌿
